Bakpao
Steam bun
(Bakpao)
Dough starter:
250 gr cake flour
150 ml warm water
1 tsp active dry yeast
1/2 T sugar
Dough:
100 gr all purpose flour
50 gr wheat starch (can be substituted with all purpose flour)
100 gr sugar
1 tsp baking powder
1/2 tsp salt
2 T vegetable oil
1-3 T warm water if needed
T=tablespoon
tsp=teaspoon
Procedure:
(1) Using a mixer with a hook attachment, mix the dough starter ingredients until smooth. Allow to rise for 1 hr.
(2) Mix in the dough ingredients to (1) and knead until smooth. Let stand for 15 minutes. Divide into 30 gr portions.
(3) Wrap one tablespoon of filling in each piece of dough, let stand for another 15 minutes. Arrange in a steamer and steam over high heat for 15 minutes.
Kalau untuk isi saya pake ilmu kira-kira, kemaren lupa enggak dicatat.
Yang pasti untuk isi ayam ini ingredients-nya:
chicken breast, ginger, garlic+shallot, green onion, sesame oil, oyster sauce, soy sauce, salt, sugar.
Untuk isi kacang hijau, silahkan lihat resep onde-onde.
